A thin layer of mayonnaise on the bread is equally practical rather than indulgent: it acts as a barrier between the crumb and the wetter fillings, helping the sandwich hold itself together instead of surrendering to them.

Then come the final layers: soft lettuce, earthy alfalfa sprouts, avocado and tomato. Each contributes something distinct. Lettuce cools the structure, sprouts add a dry, faintly grassy note, avocado deepens the softness without dulling it, and tomato supplies the juicy brightness that keeps the sandwich open. That vertical layering is what turns a chickpea mixture on bread into a finished lunch.

Another virtue of the recipe is its usefulness beyond the moment. The chickpea salad can be made ahead and held cold for hours, and whatever remains works easily as a dip with crackers or tortilla chips. That is not a minor convenience. It is one of the marks of a strong everyday recipe: it survives real life.
